Sweet Raw Mince Pie



This cake is traditionally from New England and is filled with a mixture of candied dried fruits and selected spices.  
The Sweet Mince Pie is traditionally served during the Christmas season representing a special dessert. The fruits are soaked in alcohol that can be Cognac or Rom.  

Dough Ingredients:  

200 gr coconut flour  
200 gr almond flour  
350 ml of water  
4 tablespoons of coconut nectar or other sweetener  

Preparation:  

Mix all the ingredients in the kitchen robot until the composition stays tied.  
If necessary add water. Set the composition in tart forms or any other desired shape.  
The tarts are dehydrated for 30 minutes, after take out the tarts from the shapes and dehydrate them for 1-2 hours.  



Ingredients for filling:  

230 gr dried fruits (raisins, cherries, dates, figs, plums, apricots)  
4 gr of fresh ginger or 1/2 teaspoon of ginger powder  
1 peeled orange 
1  peeled lemon
1 peeled apple 
1 teaspoon of cinnamon  
1/3 teaspoon cloves powder  
1/2 teaspoon of nutmeg powder  
Rom *  

Preparation:  

Mix the apple, lemon, orange together with all the spices in the blender to get a creamy paste. Cut all the dried fruits in small cubes and put them to macerate together with the composition of apple, lemon, orange and cover everything with Rom.  Leave the composition to macerate for 8-24h.  
Set the macerated composition in the tarts forms.  

In total I had 26 small tarts.  

* Rum can be replaced with orange juice.
