This raw vegan mayonnaise is based on the parsnip root which is giving a lighter taste and consistency.   Ingredients:    100 g of parsnip root     80 gr of sunflower seeds   2-3 cloves of garlic   250-300 ml water *   1 tablespoon of mustard   1 tablespoon of Apple Cider Vinegar    salt*    Preparation:    Soak the sunflower seeds in the water for 2-4h, drain and rinse.   Mix all the ingredients in the blender.    * Add the water depending on the consistency that you want to have for your mayonnaise.    * Salt is added if needed, depending on the mustard you are using if is not too salty.
